• Start off with rinsing testicle well.
• Season with salt and pepper, and rub well with
marjoram.
• Beat the veal steak with a rolling pin or steak mallet
to flatten it. Roll the testicle into the steak & tie it up.
• Fry it in pre-heated lard. Add 100 ml white wine
and a bit of water.
INGREDIENTS:
• When meat softens up, take it out of the saucepan
1 CALF TESTICLE
and move into the baking dish.
SALT
• Pour the juice stewed from whine wine and water
PEPPER
and add sliced mushrooms.
1 THIN VEAL STEAK
1 TABLESPOON LARD • Roast in the oven for about 30 minutes.
100ML WHITE WINE
• When ready, add natural yoghurt.
200G FRESH BUTTON
MUSHROOMS
• Cut meat into slices, arrange it on the baking dish
300ML NATURAL
YOGHURT
and serve juice separately.
Please note that for each recipe testicles have to be marinated overnight.
