TR ADITIONAL ST YLE TESTICLES
• Separate testicles skin with a very sharp knife. It is
easier if testicles are previously frozen and peel the
skin off while they are defrosting. Place them in
a pot, cover with salty water and leave to settle until
blood separates.
• Move them in a bigger pot, add enough water so
that testicles float and also a tablespoon of vinegar.
• Bring them to boil, then drain and rinse out.
INGREDIENTS:
• Leave to cool and cut each testicle into four oval

shaped slices. Season with salt & pepper on both
(OR SHEEP, LAMB, CALF,

TURKEY TESTICLES)
1 CUP PLAIN FLOUR
• Mix flour, cornflower & a touch of garlic powder
¼ CUP CORN FLOUR
together.
1 CUP RED WINE
SALT, PEPPER, GARLIC
• Roll each piece into the mix, dip into milk, then in
POWDER
the mix again, then into wine and back into the mix.
TABASCO SAUCE
Repeat the procedure if you want skin to be firmer.
LARD (OR COOKING OIL)
Please note that for each recipe testicles have to be marinated overnight.
