TESTICLES A L A KNEZ MILOSH
Legend has it that the dish that Knez Milosh, a 19th century Serbian ruler,
enjoyed most and which kept him fit, was made from bull or boar testicles.
• Remove the skin of the testicles completely, and cut
them into thumbnail sized slices and rinse with cold
water.
• Leave to drain, prepare a marinate sauce and add
lard to it.
• Lay chopped testicles, a few corn peppercorns,

pepper, sprig of thyme, garlic & red pepper powder.

Leave it overnight in a cold place.

• Just before lunchtime the following day, take the
