Mashed
Potatoes
with Caramelized Garlic
This may be the simplest recipe on
the menu, but it requires a few
choring steps to reach the simply
delicious end result.
make 6 servings
10 Yukon Gold potatoes peeled
1 cup half and half
4 Tablespoons butter
1 head Caramelized Garlic
black pepper to taste
sea salt to taste
Cut potatoes in cubes. Place
potatoes in a large pot and cover
them with water. Bring the water to
a boil, lower the heat to a simmer
and cook the potatoes until very
tender, about 25 to 30 minutes.
Combine the cooked potatoes, the
half and half, butter, caramelized
garlic and mash by hand or with an
electric mixer. Black pepper and
seas salt to taste.
Tips:
Add fresh chopped chives herbs for variation.

Use Yukon Gold, which has a less starchy
flavor than other varieties.

Be sure not to overcook or undercook potatoes.
Use a knife to check for doneness. It should
slip out with-ease when done.
For a low-fat version, substitute hot chicken
broth for the half and half.
